Fried sauce noodles is top easy recipes for dinner. It can be described as sauce surface noodle. Some meats cooked with sauce, oil. plus some vegetables in the noodle. it is a popular food in Northern of China, like, Beijing, Tianjin.

Time:  20     minutes                              5-6 services                                                                                                                                                        


1 lb Pork ,

1.5 lb Noodles .

4 cubed pieces of Tofu ,

half of medium size of cucumber

2 green onion ,

4 slices ginger

4 tbs Black bean sauce (or paste)

1 cup Sweet Flour Sauce

2 tbs Soy sauce .

1 tbs Salt

1/3 cup of Olive Oil

1 hand full Pea leaves tip (option)


  1. Preparation

Wash the vegetables and meats, cut meats to be ground or small cubed and cut cucumber to be shredded, and cut green onion to be small pieces.

2. Preparing fry sauce procedures.

  • Put into 1/3 cups of oil into a wok, turn on the stove to medium heat, add finely chopped fresh ginger.
  •  put ground or cubed meats into wok and stir until the end of the meat exudes a fragrance, color white.
  • Put 1/2 cup of Sweet flour sauce into the wok, along with two tablespoons of soy sauce, continue stir in small fire. According to the thick paste of meat sauce, pour 1 or 1 and half cup of boiling water.
  • Turn the fire to be big, pour the small cubed tofu into the wok, boil, and continue to stir in order to keep from sticking to the wok. Add salt as appropriate, 1 tbs., and slowly boil for 7-8 minutes. Cook until the meat and oil separate, the oil in the sauce forced out, turn off the fire! Sprinkle a little bit of chopped green onion.

    3. Boiling the noodles:

  • Fill pot 2/3 full of  water, turn on the stove and heat till water boils, then put half of the noodles into the water  and boil about 2-3 minutes (3-5 minutes for dry noodle) till the noodles are cooked. The volume of the water in the pot should be more than enough to cover the noodles.
  • Option) Throw the pea leaves into the pot till boiling, turn off the stove.

 4. Prepare dishes:

Put some cooked noodles into a bowl or a favorite dishes, put some of cucumber on the noodles, pour a large amount of fried sauce, mix well, you can start to eat.


  • The left over the fry sauce cooked if you cannot eat in one time, it is best to put a good sealed container (or glass jar) into the refrigerator to save, eat within a week.
  • The fry sauce should boil enough time to force the oil out from the sweet flour sauce.
  • The amount of oil for cooking should be doubled than usual.
  • The most classic vegetables can be based on seasonal characteristics and family tastes, choose light, green, crisp types of vegetables. Such as, cucumber silk, radish, bean sprouts. The three are most classic.
  • Only boil the volume of the noodles for the number of people eating. Stored cooked noodles are not as good.
